Protein Packed Mayo Free Egg Salad.

I was not planning to post a recipe today but while staring into my semi-empty fridge, stomach growling, I came up with this simple and delicious one that I thought I would share!

Mayonnaise Free Egg Salad for One:
1/2 Cucumber, diced
1/2 Avocado
2 Organic Eggs, hard boiled
1/2 teaspoon Organic Apple Cider/Rice Wine Vinegar
Salt and Pepper to taste
  1. Hard boil your eggs by filling a pot with enough water to cover the eggs. Bring to boil and put eggs in for 20 minutes. Voila!
  2. While eggs are boiling, in a bowl mash 1/2 avocado, add cucumber, vinegar
  3. Once eggs are done, cool them under cold water and then peel 
  4. Chop the eggs on a cutting board and combine into the avocado mixture
  5. Add salt and pepper to taste


  1. Why 20 minutes for the eggs? 10 minutes should do the trick just fine and save half the energy. Nice recipe though. I need to try it myself :)
